Rhubarb & Pear Crumble Cake

Today, I wanted to share with you this simple recipe for a delicious cake! A Rhubarb and Pear cake with a crumble topping! At first, I was planning to use rhubarb and apples, as I’ve used that combination a lot of times before. But then I realized that there are 3 lonely pears on the kitchen cupboard. So I thought, โ€žMaybe I could use them instead of apples?โ€. And I did! The cake turned out very scrumptiousย ๐Ÿ˜€


The rhubarb was a little bit sour, and the pears were really sweet, so they balanced each other out very well. If you want though, you can still use apples instead of pears. I also think that strawberries would be perfect for this recipe!


For this cake, I decided a crumble topping will be the best, but of course you can skip doing it and dust the cake with icing sugar after it’s baked. However, for me personally, the crumble topping was one of the most exciting parts of this cakeย ๐Ÿ˜†

  • 4 eggs

  • ยพ cup brown sugar

  • 1 ยฝ cup all-purpose flour

  • 1 teaspoon baking powder

  • ยฝ cup sunflower oil

  • 1 cup chopped rhubarb

  • 2-3 pears, peeled and cut

  • coconut oil (to grease the pan)

For the crumble:

  • 1 cup flour

  • 1 cup icing sugar

  • ยฝ sunflower oil

  1. Preheat the oven to 180ยฐC/350ยฐF and grease a 25 cm (10 inch) spring form pan with coconut oil.

  2. In a bowl mix the flour with the baking powder.

  3. In a separate bowl whisk together the eggs and sugar with a mixer.

  4. Add the flour and the sunflower oil and continue mixing until everything is well incorporated.

  5. Pour the batter into the pan.

  6. Place the chopped rhubarb and pears on top of the batter.

  7. Next make the crumble: mix all of the ingredients with your hands until the mixture resembles breadcrumbs.

  8. Sprinkle the crumble on top of the fruit.

  9. Bake for about 40 minutes.

  10. After 40 minutes use a tooth pick to check if the cake is ready. If it comes out clean, your cake is done ๐Ÿ™‚
