Cinnamon Banana Bread

This banana bread is worth baking even for the smell alone. A sweet scent fills the whole kitchen as soon as the bread starts baking. It’s quick, easy and oh-so-good! There is something incredibly comforting about warm and fluffy banana bread along with some hot tea or coffee, especially when the weather outside is chilly.

I decided to go a step further and bake my banana bread with a delicious and crunchy cinnamon topping. Cinnamon and bananas are literally made for each other, these two flavors go so well together!

Ingredients:

  • 2 cups flour
  • 1 teaspoon baking soda
  • Β½ teaspoon salt
  • 1 teaspoon cinnamon
  • 3 bananas
  • 1 egg
  • Β½ cup brown sugar
  • Β½ cup vegetable or canola oil

For the topping:

  • 1 cup rolled oats
  • Β½ cup flour
  • 4 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 125g butter
  1. Preheat oven to 180ΒΊC/350ΒΊF and line a loaf pan with parchment paper.
  2. In a small bowl mix the flour, baking soda, salt and cinnamon.
  3. In a separate bowl mash the bananas with a fork. Next add the egg, sugar and oil and stir everything together.
  4. Add the dry ingredients to the wet ones and mix well until everything is incorporated.
  5. Pour the mixture into the loaf pan.
  6. Prepare the topping: place the oats,flour, sugar and cinnamon in a bowl. Add the butter and use your hands to mix rub in the butter until the mixture resembles breadcrumbs.
  7. Sprinkle the cinnamon crunch on top of the banana bread.
  8. Bake for about 50 minutes – 60 minutes, checking regularly until a toothpick comes out clean.
