The most common way to make pesto is to simply blend up some basil leaves with parmesan and pine nuts. But at the time I needed to make it, I unfortunately did not have those ingredients at hand. However I did have other things in my house which could perfectly replace the original ingredients. Instead of basil I used parsley and instead of pine nuts I used walnuts. I also added some olive oil and garlic cloves. If you don’t like garlic you can totally just skip it. For a more cheesier version of this you can just add some grated parmesan 🙂
The way to create this delicious pesto is as easy as making a smoothie. Literally. You just toss all the ingredients in a blender and mix everything well until you get the desired consistency. What could be easier? 😁
One time I even used spinach to make pesto and it also turned out great! So you can basically use any „leaves” you have in the fridge. What you do with the pesto is up to you! It tastes great with pasta, on toast or as a salad dressing.
- 2 cups parsley leaves
- 2-3 garlic cloves
- ½ cup olive oil
- ½ walnuts
- ½ teaspoon salt
- ¼ teaspoon pepper
Place all of the ingredients in the blender and pulse until a paste has formed.
