Parsley Pesto

The most common way to make pesto is to simply blend up some basil leaves with parmesan and pine nuts. But at the time I needed to make it, I unfortunately did not have those ingredients at hand. However I did have other things in my house which could perfectly replace the original ingredients. Instead of basil I used parsley and instead of pine nuts I used walnuts. I also added some olive oil and garlic cloves. If you don’t like garlic you can totally just skip it. For a more cheesier version of this you can just add some grated parmesanΒ πŸ™‚

The way to create this delicious pesto is as easy as making a smoothie. Literally. You just toss all the ingredients in a blender and mix everything well until you get the desired consistency. What could be easier? 😁

One time I even used spinach to make pesto and it also turned out great! So you can basically use any β€žleaves” you have in the fridge. What you do with the pesto is up to you! It tastes great with pasta, on toast or as a salad dressing.
